A soft cake with a sweet taste of red fruits.
It is a cake created by pure chance and it has already become one of my
favorites!
Plum cake blueberries and
apples
2 whites egg
1 whole egg
100 g sugar
70 g butter
200 g flour
1 tablespoon Maizena or corn flour
100 ml of milk
1 teaspoon yeast
1 lemon (zest and juice)
1 apple
100 g blueberries
Whip the whites eggs lightly until they are stiff with half of the sugar. Combine the remaining half of the sugar with the egg and the grated lemon rind and reduce the mixture until it becomes creamy.
It is

Cut the
apple into small pieces in a bowl. Add the blueberries and the
lemon juice.
Put
the flour together with the Maizena and the baking powder in a bowl. Combine the
whole mixture with egg and sugar mixture, adding the melted
butter and milk. Add the egg whites and the fruit. Mix
everything well.
Now grease
with butter and flour a cake mold and put the mixture in.
Bake it
in preheated oven at 180 degrees for 40 minutes. Control the cooking
with a skewer.
Remove it from the oven and let it cool.
Sprinkle it with powdered sugar and enjoy it.

2 albumi
1 uovo intero
100 gr zucchero
70 gr burro
200 gr farina
1 cucchiaio di Maizena o farina di mais
100 ml di latte
Mezza bustina lievito
1 limone (scorza e succo)
1 mela
100 gr mirtilli
Montate
leggermente a neve i due albumi con metà dello zucchero. Unite l’altra
metà dello zucchero con l’uovo intero e la scorza grattugiata del limone e
riducete il composto a crema.
Tagliate la mela a pezzetti in una coppa. Aggiungete i
mirtilli e il succo del limone. Unite in una ciotola la farina, la Maizena e il
lievito. Unite il tutto al composto di uovo e zucchero aggiungendo il burro
sciolto e il latte. Aggiungete gli albumi montati a neve e la frutta. Mescolate
il tutto per bene.
Ora imburrate e infarinate uno stampo da plum cake e
metteteci il composto. Infornate in forno preriscaldato a 180 gradi per 40
minuti.
Controllate la cottura con uno spiedino.
Toglietela da forno e lasciatela raffreddare.
Spolverate di zucchero a velo e gustate.
