Cantucci


Christmas is getting closer. I bet you are already thinking about all the tasty things you are going to prepare and enjoy! J. And that's why today I propose you a delicious cookies from Toscany. They are famous around the world and remind me of Christmas: the “Cantucci”. I thank Nicoletta of “La Cucina del Sole” for the easy, fast and good recipe.

Il Natale è sempre più vicino. Scommetto che state già pensando a tutte le cose buone che preparerete e gusterete! J Ed è per questo che oggi voglio proporvi dei dolci buonissimi toscani. Sono famosi in tutto il mondo e mi ricordano tanto il Natale: I “Cantucci”. Ringrazio Nicoletta della “Cucina del sole” per la ricetta facile, veloce e buona.

 Cantucci 

 520 gr flour
 320 gr sugar
 3 teaspoons honey
 4 eggs
 320 gr almonds
 1 teaspoon salt
 1 teaspoon baking powder
 Grated rind of 1 lemon

First, toast the almonds lightly
on a low fire in a non-stick pan  and let them cool off a bit  before use them.
In a bowl put together sugar, flour, baking powder, salt and the grated lemon ring. Add the eggs and the honey and mix well. The mixture should be compact and sticky. Add the almonds and incorporate them well in the mixture.
Sprinkle the working surface with some flour and make some little cylinders. Place them on a baking-tin that you have previously covered with greaseproof paper and make sure they are a bit distant from each other. Press the rolls gently with your hands to flatten them a bit.
Bake them for 15-20 minutes in a preheated oven at 180 degrees.
Remove them from the oven, place them on a cutting board and cut them diagonally in the classic cantucci shape. Put the cookies back on the baking-tin making sure they are not too close to each other. Bake them some 15 more minutes and then leave them to cool before to taste them. You can put them in an hermetic seal boxes for biscuits, they will remain fresh for about 2 weeks.

Cantucci 

520 gr farina
320 gr zucchero

3 cucchiaini di miele
4 uova
320 gr mandorle
1 cucchiaino di sale
1 cucchiaino di lievito
scorza grattugiata di 1 limone

Prima cosa tostate leggermente le mandorle in una padella antiaderente a fuoco basso e lasciatele raffreddare prima di utilizzarle. In una coppa mettete insieme lo zucchero, la farina, il lievito, il sale e la buccia grattugiata del limone. Unite le uova e il miele e amalgamate bene. Il composto deve risultare compatto e appiccicoso. Aggiungete le mandorle e amalgamatele bene al composto. Spolverate la superficie di lavoro con della farina e formate dei piccoli cilindri. Metteteli in una teglia che avete precedentemente coperto con della carte da forno e assicuratevi che siano un po’ distanti l’uno dall’altro. Premete i rotoli delicatamente con le mani per appiattirli un po '. Infornateli per 15-20 minuti nel forno preriscaldato a 180 gradi. Rimuoveteli dal forno e metteteli su un tagliere e tagliateli diagonalmente nella classica forma dei cantucci. Rimettete i biscotti nella teglia facendo attenzione che non siano troppo vicini tra di loro. Infornateli per altri 15 minuti e poi lasciateli raffreddare prima di gustarli. Potete metterli in un contenitori per biscotti a chiusura ermetica, rimarranno freschi per circa 2 settimane.

Bread


Only 6 days to Christmas and everything takes on a different aspect. But always the simplest things are the ones that make everything special. And that's why today I want to propose you a recipe for one of the simplest and best things of the world: Bread.

Mancano 6 giorni al Natale e tutto assume un aspetto diverso. Ma sono sempre le cose più semplici che rendono ogni cosa speciale. Ed è per questo che oggi voglio proporvi la ricetta di una delle cose più semplici e buone del mondo: il pane.

Bread
400 g flour
200 ml water
20 g brewer's yeast or 4 gr powdered yeast
4 tablespoons olive oil
1 teaspoon of sugar
Salt q.b.

First, dissolve the yeast with a little of water that you need to use (water should be lukewarm) and add sugar, stir well to melt the yeast. Take a large bowl and put it the sifted flour. Add the salt, oil and yeast and mix everything well. After add the remaining water gradually while continuing to mix. The mixture should be elastic but not sticky. Form a ball and put it on a plate covered with waxed paper. Cover with a cloth and put it in a closed place (for example in the oven) letting it rise for 2-3 hours. The mixture should double in volume. After the rising hours have gone by, your loaf is ready to be baked. Make four cuts on the surface and a little flour on it. Put your bread in a preheated oven at 200 degrees for 30-40 minutes (
the cooking time depends on the oven) cooking checking after 30 minutes with an iron skewer or a knife, if it is dry your bread is ready. Leave it to cool before cutting it and taste it.

Pane
400 gr farina
200 ml acqua
20 gr di lievito di birra o 4 gr di lievito in polvere
4 cucchiai di olio di oliva
1 cucchiaino di zucchero
Sale q.b.

Come prima cosa sciogliete il lievito con un po’ dell’acqua che dovete utilizzare (l’acqua deve essere tiepida) e aggiungete lo zucchero, mescolate bene fino a far sciogliere il lievito. Prendete una ciotola capiente e metteteci la farina setacciata. Aggiungete il sale,  l’olio e il lievito e impastate bene il tutto. Dopo aggiungete man mano l’acqua rimasta continuando ad impastare. Il composto deve risultare elastico ma non appiccicoso. Formate un palla e mettetela su un piatto coperto da carta da forno. Copritelo con un canovaccio e mettetelo in un posto chiuso (ad esempio nel forno) lasciandolo lievitare per 2-3 ore. Il composto deve raddoppiare di volume. Una volta trascorse le ore di lievitazione, la vostra pagnotta è pronta per essere infornata. Fate sulla superficie quattro tagli e infarinatela un po’.Mettete la vostra pagnotta nel forno preriscaldato a 200 gradi per 30-40 minuti (la cottura cambia in base al forno) controllando la cottura dopo 30 minuti con uno spiedo di ferro o anche con un coltello, se risulta asciutto il vostro pane è pronto. Lasciatelo raffreddare prima di tagliarlo e gustarlo.

Broccoli and walnuts salad


Today I dedicate this post to a delicious side dish. Good and easy recipe also as second dish. Good cooking to all of you!
Oggi dedico il post a un delizioso contorno. Ricetta facile e buona anche come secondo piatto. Buona cucina a tutti voi!

Broccoli and walnuts salad
200 gr broccoli
4 anchovy fillets
30 gr walnuts
Balsamic vinegar q.b.
Extra virgin olive oil
Salt q.b.
Pepe q.b.
Besciamella sauce (followed the recipe HERE but try to reduce the doses if you use the besciamella for this recipe only).

Prepare the Besciamella sauce.
Then cut and wash the broccoli. Boil it for 5 minutes in salted water. Drain broccoli and place it in a bowl. Add the walnuts and anchovies, salt and pepper and mix well.
Take a bowl, put a little of Besciamella sauce and add the balsamic vinegar and extra virgin olive oil and mix well. Arrange the Broccoli salad on a plate and sprinkle the mixture just prepared over. Enjoy!


Insalata di broccoli e noci
200 gr broccoli
4 filetti di alici
30 gr di noci
Aceto balsamico q.b.
Olio extra vergine d’oliva
Sale q.b.
Pepe q.b.
Besciamella (seguite la ricetta QUI ma cercate di diminuire le dosi se utilizzate la besciamella solo per questa ricetta)

Preparate la besciamella
Poi tagliate e lavate il broccolo. Fatelo bollire per 5 minuti in acqua salata. Scolate il broccolo e mettetelo in una ciotola. Aggiungete le noci e le alici, il sale e il pepe e mescolate bene.
Prendete una ciotola, mettete un po’ di besciamella e aggiungete l’aceto balsamico e l’olio extra vergine di oliva e mescolate bene. Disponete l’insalata di broccoli su un piatto e cospargete sopra il composto appena preparato. Enjoy!

Besciamella


Today I dedicate this post to a Classic that can be useful in the kitchen and that will be an ingredient of my next recipe: the Besciamella.

We start with some history.
The Besciamella is one of the basic sauces of Italian and French cuisine, but it is also popular in the English-speaking nations where it is called white sauce.
The inventor of Besciamella was Marquis Louis de Béchamel who first proposed it in his recipes in the seventeenth century.
The name " Besciamella " (white sauce: english name) was assigned to this sauce only later by Francois Pierre de la Varenne, chef of King Louis XIV, in his cookbook "Le Cuisinier François".
There is also a school of thought that says that Besciamella was already used in Italy even earlier, at the court of the Medici, and only later exported to France.

Oggi dedico il post a un classico che puo’ essere utile in cucina e che sara’ un ingrediente della mia prossima ricetta: la Besciamella.

Partiamo con un po’ di storia.
La Besciamella e’ una delle salse basilari della cucina italiana e francese, ma e’ diffusa anche nel mondo anglosassone dove viene chiamata Salsa bianca.
L'inventore della Besciamella fu il marchese Louis de Bechamel, che per primo nel XVII secolo la propose nelle sue ricette.
Il nome "Besciamella" (salsa bianca: nome inglese) fu assegnato a questa salsa solo in seguito da Francois Pierre de la Varenne, cuoco del Re Luigi XIV, nel suo libro di ricette "Le Cuisinier François".
Esiste anche una scuola di pensiero che afferma che la Besciamella fosse già utilizzata in Italia in un periodo precedente, presso la corte dei Medici, e solo più tardi esportata in Francia.

Potatoes fritters


Today I want to present a very easy recipe to you: potatoes fritters. It may be a delicious second or a tasty starter, good for this party period. And, as they say here in Holland ... mmm lekker!! J
Oggi vi voglio presentare una ricetta facile facile: frittelle di patate. Può essere un secondo gustoso o un antipasto sfizioso, ottimo per questo periodo di feste. E come dicono qui in Olanda… mmm lekker!! J

Potatoes fritters
1 kg white potatoes
250 gr white bread
Milk q.b.
100 gr Parmesan cheese
3 eggs
Pepper q.b
Salt q.b
Parsley
Garlic (optional)
Olive oil for frying

Cut the bread into squares and place in a bowl with milk. Wash and peel the potatoes. Grate it with a grater with large holes in a large bowl. Squeeze the bread and add it to potatoes. Add the eggs, Parmesan, pepper, salt, parsley and garlic finely chopped. Mix it all to get a batter. The mixture should neither be too thin nor too thick. Heat the oil in a frying pan, take the mixture by spoonful into hot oil smashing it with a fork. Brown the fritter on both sides and then place it on paper towels to remove cooking oil in excess. Serve the fritters while still hot.


Frittelle di patate
1 kg patate bianche
250 gr pane bianco
Latte q.b.
100 gr formaggio parmigiano
3 uova
Pepe q.b
Sale q.b
Prezzemolo
Aglio (a scelta)
Olio di oliva per friggere

Tagliate il pane a quadretti e mettetelo in una ciotola insieme al latte. Lavate e pelate le patate. Grattugiatele con una grattugia a fori larghi in una coppa capiente. Strizzate il pane e aggiungetelo alle patate. Unite le uova, il parmigiano, pepe, sale, prezzemolo e l’aglio tagliato finemente. Impastate il tutto ottenendo una pastella. Il composto non deve essere ne’ troppo liquido ne’ troppo denso. Scaldate l’olio in una padella antiaderente, prendete il composto a cucchiaiate e ponetelo nell’olio caldo schiacciandolo con una forchetta. Fate dorare la frittella da entrambi i lati e poi mettetela su della carta assorbente da cucina per togliere l’olio in eccesso. Servite le frittelle ancora calde.

Simple biscuits for simple Christmas gifts



Christmas is approaching and we ought to think about gifts... I'm sure that for many of you, like me, the time of the gifts is a critical moment: tight schedules, few ideas and sometimes a limited budget. So I have taken the time to think about it and I have decided that this year I want to do something special, easy and not expensive. So what about cooking? I thought I would make some biscuits, buy some nice decorations and make gift boxes with a bit of fantasy… It will definitely be an appreciated thought for the most glutton friends and relatives. Today I propose delicious biscuits to you. They are very easy to make! We prepare two different types of biscuits but with the same mixture… but I leave the creativity to you for the decoration! Ready? Let's go!

Natale si avvicina e bisogna pensare ai regali. Sono sicura che per molti di voi, come per me, il momento dei regali e’ un momento critico: poco tempo, poche idee e a volte budget limitato. Quindi mi sono fermata a pensare e ho deciso che quest’anno bisogna fare qualcosa di speciale, facile e poco costoso. E allora che ne dite di mettersi ai fornelli? Ho pensato di preparare dei biscotti, comprare delle decorazioni carine e con un po’ di fantasia fare dei pacchetti regalo. Sara’ sicuramente un pensiero apprezzato per gli amici e i parenti piu’ golosi. Oggi vi propongo dei biscotti buonissimi e facilissimi da fare! Prepariamo due tipi di biscotti diversi ma con lo stesso impasto... per la decorazione, pero’, lascio a voi la creativita’! Pronti? Let’s go!

Courgettes stuffed with tuna and mint fragrance


As I promised, here is a second very tasty recipe. Enjoy your meal and for italian friends: enjoy the feast of the Immaculate Conception.
Come promesso ecco una seconda ricetta molto sfiziosa. Buon appetito e per gli amici italiani: buona festa dell’Immacolata.


Courgettes stuffed with tuna and mint fragrance
8 little courgettes or 3 large courgettes
150 gr tinned tuna
2 slices of white bread
2 spoons of milk
1 spoon of mint
1 onion
50 gr Parmesan cheese
3 anchovy fillets in oil
2 spoons of capers
1 egg
Pepper q.b.
Salt q.b.
Extra virgin olive oil q.b.
  
Wash the courgettes and boil them in salted water for about ten minutes. Meanwhile, cut the bread into squares and place in a bowl with milk. Chop the onion finely and brown it in a frying pan with oil and chopped anchovies. Drain the courgettes, cut the ends and divide them on their long side (if you use large courgettes divided them into two parts and then cut them on their long side). Remove the pulp with the help of a spoon and add the fried onions and anchovies and cook for a few minutes. Squeeze the bread and place in a bowl, add the Parmesan cheese, capers, tuna, fried, egg, mint, salt and pepper and mix everything. Fill the courgettes with the mixture. Put them on a baking tray lined with baking paper and bake for 20-30 minutes at 180 degrees. Let the courgettes cool for 5 minutes before serving.

Zucchine ripiene al tonno e profumo di menta
8 zucchine piccole o 3 zucchine grandi
150 gr tonno in scatola
2 fette di pane bianco
2 cucchiai di latte
1 cucchiaio di menta
1 cipolla
50 gr formaggio Parmigiano 
3 filetti di acciughe sott’olio
2 cucchiai di capperi
1 uovo
Pepe q.b.
Sale q.b.
Olio extra vergine di oliva q.b.

Lavate le zucchine e lessatele in acqua salate per circa dieci minuti. Nel frattempo tagliate a quadretti il pane e mettetelo in una ciotola insieme al latte. Tritate la cipolla finemente e fatela soffriggere in una padella con l’olio e le acciughe tritate. Scolate le zucchine, tagliate le estremita’ e dividetele a meta’per il lungo (se usate le zucchine grandi dividetele in due parti e poi tagliatele per il lungo). Con l’aiuto di un cucchiaio togliete la polpa e aggiungetela al soffritto di cipolla e acciughe, lasciate cuocere per qualche minuto. Strizzate il pane e ponetelo in una ciotola, aggiungete il parmigiano, i capperi, il tonno, il soffritto, l’uovo, la menta, il sale e il pepe e impastate il tutto. Riempite le zucchine con il composto. Ponetele in una teglia foderata di carta da forno e infornate per 20-30 minuti a 180 gradi. Lasciate riposare le zucchine per 5 minuti prima di servire.

Cake with dark chocolate flakes and almonds


Here it is my first recipe. A delicious cake for breakfast or snack. I have done it yesterday and now it’s already gone L J... I wait for your comments and suggestions. To the next recipe!
Ecco a voi la mia prima ricetta. Una buonissima torta per la prima colazione o la merenda. Io l’ho fatta ieri e ora e’ gia’ finita L J.. aspetto i vostri commenti e suggerimenti. Alla prossima ricetta!

Cake with dark chocolate flakes and almonds.
160 gr sugar
100 gr butter
2 large eggs or 3 small / medium
1 vanilla essence
200 gr flour
150 ml milk
1 tablespoon of bitter cocoa
20 gr dark chocolate
20 gr almond flakes

Cut the butter (ambient temperature) into small pieces, whip with a whisk or electric mixer until creamy, then add the sugar while continuing to beat. Add the eggs one at a time always beating the mixture until completely merged. Add the vanilla essence and then the sifted flour and milk. Stir the mixture with a wooden spoon. Once you get the mixture, divide it into two bowls: in one part of the mixture add the cocoa with a bit of milk and stir well and finally add the almonds; add the chocolate (previously cut into small pieces) in the other mixture. Butter and flour a plum cake mold. First pour the white mixture in the mold and then the chocolate mixture. Bake in preheated oven at 180 degrees for 40-45 minutes, (the cooking time depends on the oven) prick the cake with a toothpick to make sure the cooking: if the toothpick is dry, the cake will be ready to be baked . Remove it from the oven and let cool, remove from the mold and dusted with powdered sugar.
Excellent with a good cup of Italian coffee!

Torta con scaglie di cioccolato fondente e mandorle.

160 gr zucchero

100 gr burro

2 uova intere grandi o 3 medio/ piccole

1 bustina vanillina

200 gr farina

150 ml latte

1 cucchiaio di cacao amaro

20 gr di cioccolato fondente

20 gr di mandorle a scaglie

Tagliare il burro (temperatura ambiente) a pezzetti, sbattetelo con una frusta o sbattitore elettrico fino a ottenere una crema, poi unire lo zucchero continuando a sbattere. Unite le uova una per volta sempre sbattendo fino ad amalgamarle al composto. Unite la bustina di vanillina e dopo la farina setacciata e il latte. Mescolate il composto con un cucchiaio di legno. Una volta ottenuto il composto dividetelo in due ciotole: in una parte del composto aggiungete il cacao con un altro po’ di latte e mescolate bene e in ultimo le mandorle; nell’altro aggiungete la cioccolata precedentemente tagliata a pezzetti. Imburrate e infarinate uno stampo da plum cake. Versate per primo il composto bianco e infine il composto al cioccolato. Cuocete nel forno preriscaldato a 180 gradi per 40-45 minuti, (il tempo di cottura è variabile in base al forno.) accertatevi della cottura punzecchiando la torta con uno stecchino; se quando l’estrarrete sarà asciutto, la torta sarà pronta per essere sfornata. Estraetela dal forno e lasciate raffreddare, toglietela dallo stampo e spolverate di zucchero a velo.
Ottima con una buona tazza di caffe’ italiano!

Benvenuto nel mio blog. Questo e' per me l'inizio di una nuova esperienza. L'esperienza di fare cio' che mi rende felice.

A little about me:

My name is Carmen and I grew up in a beautiful country: Italy. Love, hope and the desire for new experiences have made me leave my land. Now I live in Amsterdam but I brought with me all the beauties of my country. Among these, there is love for cooking. I'm 26, many experiences, many sacrifices, some mistakes and many uncertainties… but the hope of finding the right way. And I do understand that I have to start by doing what makes me happy: Cooking. So I have created this blog: to be able to share with you and myself my (and hopefully yours) happiness.

Mi chiamo Carmen e sono cresciuta in una terra bellissima: l’Italia.  L’amore, la speranza, la voglia di nuove esperienze mi hanno fatto lasciare la mia terra. Ora vivo ad Amsterdam ma ho portato con me tutte le ricchezze del mio paese. Tra queste l’amore per la cucina. Ho 26 anni tante esperienze vissute, tanti sacrifici, un po’ di errori e tante incertezze ma con la speranza di trovare la strada giusta.  E per farlo ho capito che bisogna iniziare facendo cio’ che mi rende felice: Cucinare. Cosi ho creato questo blog: per poter condividere con voi e con me stessa la mia (e spero anche la vostra) felicita’.
