Potetoas timbale with taleggio cheese and pears.

Potetoas timbale with taleggio cheese and pears.

500 gr potatoes
100 gr “taleggio” cheese
1 pear
2 eggs
60 gr parmesan cheese
1/2 glass milk
some butter
salt and pepper
breadcrumbs q.b.
thyme

Wash the potatoes and boil them (without peeling them so that they don't absorb too much water) in plenty of salted water until thoroughly cooked. One important thing is that potatoes have to be completely under water.
In the mean while, peel the pears and cut them into cubes. Cut also the “taleggio” cheese in pieces.  
Remove the potatoes from the water and mash them with a potato ricer while they are still warm (the skin will stay in the ricer).
Let them cool for a bit and add the eggs, mix well and then add the cubes pear, “taleggio” cheese, the Parmesan, half glass of milk, the thyme and pepper and salt.
Mix everything well.
Grease a baking tin with some butter and dust it with some breadcrumbs. Put the mixture in the baking tin.
Level the surface and sprinkle it with breadcrumbs. Complete with some flakes of butter.
Bake it at 200 degrees for about 30-35 minutes.

Sformato di patate con taleggio e pere

500 gr di patate
100 g di "taleggio"
1 pera
2 uova
60 g di parmigiano
1/2 bicchiere di latte
po' di burro
sale e pepe
pangrattato q.b.

Lavare le patate e lessarle (senza sbucciarle in modo che non assorbono troppa acqua) in abbondante acqua salata fino a cottura. Una cosa importante è che le patate devono essere completamente sotto l'acqua.
Nel frattempo, sbucciare le pere e tagliarle a dadini. Tagliare anche il formaggio "taleggio" a pezzi.
Togliere le patate dall'acqua e schiacciarle con un schiacciapatate mentre sono ancora calde (la pelle rimarrà nello schiacciapatate).
Lasciateli raffreddare per un po' e aggiungere le uova, mescolare bene e aggiungete la pera a cubi, il formaggio "taleggio", il parmigiano, mezzo bicchiere di latte, il timo, sale e pepe.
Mescolare bene il tutto.
Ungere una teglia con un po' di burro e spolverate con pane grattugiato. Mettere il composto nella teglia.
Livellare la superficie e cospargere di pangrattato. Completate con alcuni fiocchi di burro.
Cuocere in forno a 200 ° per circa 30-35 minuti.
