focaccia with tomatoes and olives

Today, I just want to prepare something tasty, and above all, easy to do.
What do you think about a good focaccia with tomatoes and olives? I like it even just with oil and salt. And how do you like it? I'm really curious about your ideas ...

Che ne dite di una buona focaccia con pomodorini e olive? A me piace anche solo con l’olio e il sale. E a voi come piace? Sono proprio curiosa di scoprire le vostre idee …

Focaccia tomatoes and olives
Dough: Follow the recipe here
Tomatoes q.b.
Olives q.b.
Oil q.b.
Salt q.b.
Oregano q.b.

Prepare the dough by following the bread recipe. 
Roll out the dough on a baking sheet lined with baking paper and cover it with a cloth. Let it rise for 2 hours. 
Once it has leavened, cut the tomatoes in half and arrange them on the focaccia. Do the same for the olives. 
After, put some oregano, salt and oil. Bake in preheated oven at 200 degrees for 30-40 minutes.

Focaccia pomodorini e olive
Impasto: segui qui la ricetta
Pomodorini q.b.
Olive q.b.
Olio q.b.
Sale q.b.
Origano q.b.

Preparate l’impasto seguendo la ricetta del pane. 
Stendete l’impasto su una teglia rivestita da carta da forno e copritela con un panno. Lasciatelo lievitare per 2 ore. 
Una volta lievitato tagliate i pomodorini per metà e disponeteli sulla focaccia. 
Fate lo stesso con le olive. Dopo mettete anche l’origano, il sale e l’olio. Infornate nel forno preriscaldato a 200 gradi per 30-40 minuti.

Chocolate Terrine

I do not know if in your original country is this cold now, but here it definitely is. And when it's cold the thing that comes to my mind is chocolate! I believe that's the same for many of you also!
That is why today I want to propose you a dessert which is impossible to resist: the terrine with chocolate! Try it with cream, it is delicious.

Non so dalle vostre parti ma qui fa freddo. E quando fa freddo la cosa che mi viene subito in mente è cioccolata!!! Credo che anche a molti si voi! 
Ed è per questo che oggi voglio proporvi un dolce al quale è impossibile resistere: la terrina al cioccolato! Provatela con la panna, è deliziosa.

Chocolate Terrine
3 whites egg
100 g sugar
1 teaspoon of vanilla essence
70 g flour
140 g dark chocolate
Fresh milk q.b.

Whip the whites egg with the vanilla and half of the sugar. 
Meanwhile, let the chocolate melt in a bain-marie. Once cooked, add the remaining sugar, flour and mix to it. Add a bit of milk until the mixture is creamy. 
Now add the mixture in spoonfuls of egg whites. Try to mix top-down in rotation so that the eggs white does not sink. 
Now take a rectangular cake pan and cover it with some baking paper. Arrange the mixture on it and bake it in the oven at 180 degrees for 30-40 minutes. 
I do not recommend it too dry, check the cooking after 30 minutes
Remove it from the oven when it is ready and let it stand. Sprinkle the surface with icing sugar and serve with some cream. Delicious!! :) 

Terrina al cioccolato

3 albumi
100 gr zucchero
1 bustina vanillina
70 gr farina
140 gr cioccolato fondente
Latte fresco q,b

Montate a neve gli albumi con metà dello zucchero e la vanillina. Nel frattempo fate sciogliere il cioccolato a bagnomaria. Una volta pronto aggiungete ad esso lo zucchero rimasto, la farina e amalgamate. Aggiungete un po’ di latte fino ad ottenere un impasto cremoso. Ora aggiungete all’impasto i bianchi montati a cucchiaiate. Cercate di mescolare dall’alto verso il basso in modo rotatorio in modo da non far smontare l’albume. 
Ora prendete una tortiera rettangolare e copritela con carta da forno. Disponete su di essa il composto e fate cuocere al forno a 180 gradi per 30-40 minuti.
Consiglio di non farla asciugare troppo, controllate la cottura dopo 30 minuti.
Una volta pronta toglietela dal forno e lasciatela riposare. Cospargete la superficie di zucchero a velo e servitela con un po’ di panna. Deliziosa!! :)

Salmon with lemon and black olives

hello everyone!
Here I am, back after some days of absence. I had some guests during this period. So I've been a bit busy between food-shopping and dishes preparations. But it is always nice and very pleasant to see that people taste and appreciate my dishes! And after this short parenthesis let's go back to our recipes.
Is there anything good are you cooking for lunch?
Today, I want to propose you a simple dish, tasty and nutritious: "Salmon with lemon and black olives"!! Hmm, my mouth is already watering! And yours?

Eccomi ritornata dopo un po’ di giorni di assenza. Ho avuto un po’ di ospiti in questo periodo. Quindi sono stata un po’ impegnata tra spese e preparazioni dei piatti. Ma è sempre bello e molto piacevole vedere che la gente gusta e apprezza i miei piatti!! E dopo questa piccola parentesi torniamo alle nostre ricette. 
Cosa state cucinando di buono per pranzo? 
Io oggi voglio proporvi un piatto semplice, gustoso e nutriente: "Salmone al limone con olive nere"!! Mmm io ho già l’acquolina in bocca!! E voi?

Salmon with lemon and black olives
4 slices of fresh salmon
1 lemon
100 g pitted black olives
20 g butter
Fresh basil q.b.
Fresh coriander q.b.
Salt q.b.


Wash the fish. Melt the butter in a nonstick frying pan. Place the slices of fillet in the pan. Add the olives and lemon juice. Turn the steaks to cook the fish on both sides. Put some basil and coriander finely chopped. Let cook for a further 2 minutes and turn off the heat and add a bit of salt. Arrange the fish on a plate and enjoy it hot.

Salmone al limone con olive nere
4 tranci di salmone fresco
1 limone
100 gr di olive nere snocciolate
20 gr burro
Basilico fresco q.b.
Coriandolo fresco q.b.
Sale q.b.

Lavate il pesce. Fate sciogliere il burro in una padella antiaderente. Mettere i tranci di filetto nella padella. Aggiungete le olive e il succo del limone. Girate i tranci per far cuocere il pesce da entrambi i lati. Aggiungete sopra il basilico e il coriandolo finemente tritate. Lasciate cucinare per altri 2 minuti e spegnete il fuoco e aggiungete un po’ di sale. Disponete il pesce sul piatto e gustatelo ancora caldo.

Small cakes

Hello everyone! Now I want to propose something sweet! Something will surely like even the children: the small cakes. The doses are for 7-8 small cakes. I've divided them: some with chocolate and some with red fruits. Both delicious!

Ciao a tutti!! Oggi voglio proporvi qualcosa di dolce! Qualcosa che piacerà sicuramente anche ai più piccoli: delle mini torte. Le dosi sono per 7-8 mini torte. Le ho divise: un po’ col cioccolato e un po’ con i frutti rossi. Deliziose entrambe!!

Small cakes

190 g flour
90 g butter
100 g sugar
100 ml milk
1 large egg
1 teaspoon of baking powder
1 teaspoon of vanilla essence (optional)
Grated rind of one lemon
A pinch of baking soda

A pinch of salt
Drops of chocolate or red fruits if you like it.

Cut the butter (at room temperature) into small pieces and add it to the sugar. With the help of a whisk or an electric mixer reduce the mixture to cream. Put the egg and salt and continue stirring. Then add the grated lemon rind. In a bowl add the sifted flour, baking powder, baking soda and vanilla (optional) and mix together. Join them to the egg mixture, sugar and butter in spoonfuls. Add the milk and mix it all so as not to form lumps. You can also add chocolate chips to the mixture or red fruits. With the help of a spoon to put some compound in paper cups with no fill to the brim. Bake in preheated oven at 180 degrees for 25-30 minutes. Baked your little cakes and let them rest for 5 minutes. Sprinkle them with powdered sugar and enjoy them!

Mini torte

190 gr farina
90 gr burro
100 gr zucchero
100 ml latte
1 uovo grande
Mezza bustina di lievito per dolci
1 bustina vanillina (facoltativa)
Scorza grattugiata di un limone
Un pizzico di bicarbonato
Un pizzico di sale
Gocce di cioccolato o frutti rossi a piacere

Tagliate il burro (a temperatura ambiente) a pezzetti e unitelo allo zucchero. Con l’aiuto di una frusta o sbattitore elettrico riducete il composto a crema. Unite l’uovo e il pizzico di sale e continuate a mescolare. Poi aggiungete la scorza del limone grattugiato. In una coppa unite la farina setacciata, il lievito, il bicarbonato e la vanillina (facoltativo) e mescolate il tutto. Uniteli al composto di uovo, zucchero e burro a cucchiaiate aggiungendo man mano anche il latte e amalgamate il tutto in modo da non formare grumi. Potete anche unire al composto gocce di cioccolato o dei frutti rossi. Con l’aiuto di un cucchiaio mettete un po’ di composto nelle pirottine di carta senza riempirle fino al bordo. Infornate nel forno preriscaldato a 180 gradi per 25-30 minuti. Sfornate i vostri tortini e lasciateli riposare per 5 minuti. Cospargeteli di zucchero a velo e gustateli!

Polpette di carne (Meatballs)

Hello to you all! Is there anything good in the kitchen?? I prepare another dish of my beloved Calabria: meatballs. This dish is prepared all over Italy, and each one has his/her own way of preparing them, often with the addition of different ingredients. They can be enjoyed along with the tomato sauce or fried in some olive oil. The fried ones are more caloric but… sometimes we can go for a little whim. J

Ciao a tutti voi! Che c’è di buono tra I fornelli?? Io preparo un altro piatto dell’amata Calabria: le polpette di carne. È un piatto che si prepara in tutta Italia e ognuno ha il suo modo di prepararle magari con l’aggiunta di ingredienti diversi. Possono essere gustate insieme al sugo di pomodoro oppure fritte in olio di oliva. Quelle fritte sono più caloriche ma …ogni tanto possiamo toglierci qualche sfizio. J Siete pronti? Via!!!

Meatballs
250 grams ground meat
2 eggs
250 g bread
Parmesan cheese q.b
Pepe q.b.
Parsley q.b.
Salt q.b.
Milk for the bread
Olive oil for frying

Place the bread soaked with milk. Take a bowl and put the meat inside it. Squeeze the bread and put it together with the meat. Add the eggs, the cheese, the pepper, the salt and the parsley chopped thinly. Mix all together well. Put the oil in a pan to heat it. Form meatballs and fry them in the oil. Fry them well and then put them on paper towels to remove oil in excess. Now taste them! They are good either warm or cold.

Polpette di carne
250 gr macinato di carne
2 uova
250 gr pane
Formaggio parmigiano q.b
Pepe q.b.
Prezzemolo q.b.
Sale q.b.
Latte per il pane
Olio di oliva per friggere

Mettere il pane ammollo con il latte. Prendete una ciotola e metteteci la carne. Strizzate il pane e mettetelo insieme alla carne. Unite le uova, il formaggio, il pepe, il sale e il prezzemolo tritato finemente e mescolate il tutto per bene. Mettete a scaldare in una padella antiaderente l’olio. Formate le polpette e soffriggetele nell’olio. Fate dorate bene e poi mettetele su carta assorbente da cucina per togliere l’olio in eccesso. Ed ora gustatele! Sono buone sia calde che fredde.

Scilatelle or Scilatiaddri


Here we are, back from the Christmas holidays. I wonder how many good things you have eaten! I have tasted all the specialties of my native land: Calabria. 
I bet you're curious about all those recipes … there are a too many of them but we will discover them together during these days. 
To get started, today I want to propose the typical home-made pasta: the "Scilatelle" that in Calabria are called.... "the Scilatiaddri"! Think about it: at my parent's place, they are prepared every Sunday!! It’s a simple pasta to make but very tasty, especially if it’s served with a nice fresh tomato sauce. 
I am also very curious to find the recipes of your areas. I look forward to hearing all your comments. And now let’s go and prepare our "Scilatiaddri".

Eccoci ritornati dalle vacanze natalizie. Chissà quante cose buone avete mangiato!! Io ho gustato tutte le specialità della mia terra: la Calabria. 
Mi sa che siete curiosi di sapere tutte le ricette … sono un po’ tante però le scopriremo insieme durante questi giorni. 
Per iniziare, oggi voglio proporvi la tipica pasta fatta in casa: le Scilatelle che in Calabria si chiamano ...“i Scilatiaddri”!  Pensate a casa dei miei genitori si preparano tutte le domeniche!! È una pasta semplice da fare ma molto gustosa soprattutto se condita con un bel sugo di pomodoro fresco. 
Sono anche molto curiosa di scoprire le ricette tipiche delle vostre zone. Attendo tutti i vostri commenti. Ed ora andiamo a preparare i nostri “Scilatiaddri”.
