Scilatelle or Scilatiaddri


Here we are, back from the Christmas holidays. I wonder how many good things you have eaten! I have tasted all the specialties of my native land: Calabria. 
I bet you're curious about all those recipes … there are a too many of them but we will discover them together during these days. 
To get started, today I want to propose the typical home-made pasta: the "Scilatelle" that in Calabria are called.... "the Scilatiaddri"! Think about it: at my parent's place, they are prepared every Sunday!! It’s a simple pasta to make but very tasty, especially if it’s served with a nice fresh tomato sauce. 
I am also very curious to find the recipes of your areas. I look forward to hearing all your comments. And now let’s go and prepare our "Scilatiaddri".

Eccoci ritornati dalle vacanze natalizie. Chissà quante cose buone avete mangiato!! Io ho gustato tutte le specialità della mia terra: la Calabria. 
Mi sa che siete curiosi di sapere tutte le ricette … sono un po’ tante però le scopriremo insieme durante questi giorni. 
Per iniziare, oggi voglio proporvi la tipica pasta fatta in casa: le Scilatelle che in Calabria si chiamano ...“i Scilatiaddri”!  Pensate a casa dei miei genitori si preparano tutte le domeniche!! È una pasta semplice da fare ma molto gustosa soprattutto se condita con un bel sugo di pomodoro fresco. 
Sono anche molto curiosa di scoprire le ricette tipiche delle vostre zone. Attendo tutti i vostri commenti. Ed ora andiamo a preparare i nostri “Scilatiaddri”.

Scilatelle (or Scilatiaddri)
200 g  hard wheat flour
200 g white flour
1 pinch of salt

Lukewarm water q.b.

Sift together the two flours. Arrange them on the work table like a fountain. Add a pinch of salt and water. As far as water is concerned, you need to adjust it in order to have a soft but elastic dough. Work the dough well and let it rest for about half an hour by covering it with a cloth. Then, take small amounts of dough and knead them on the work table forming long sticks as shown in the image. Divide the sticks into smaller pieces and arrange them on the table or on a cloth. Now sprinkle the hard wheat flour on them, to make sure that the sticks do not stick. Cook them in boiling salted water for about 5 minutes and serve them with a good tomato sauce and meatballs.





Scilatelle (o Scilatiaddri)
200 gr farina di grano duro
200 gr farina bianca
1 pizzico di sale
Acqua tiepida q.b.

Setacciate insieme le due farine. Disponetele a fontana sul piano di lavoro. Aggiungete il pizzico di sale e l’acqua. Per l’acqua dovete regolarvi in modo da avere un impasto morbido ma elastico. Lavorate bene il tutto e lasciate riposare l’impasto per circa mezz’ora coperto da un panno. Dopo prendete piccole quantità di pasta e lavoratele sul piano di lavoro formando dei lunghi bastoncini come da immagine. Dividete i bastoncini in parti più piccole e disponeteli sul tavolo o su una tovaglia. Ora cospargeteli di farina di grano duro per fare in modo che non attacchino. Cuocete in abbondante acqua salata per circa 5 minuti e conditeli con un buon sugo di pomodoro e polpettine di carne.
