Tomatoes stuffed with ricotta cheese and eggs

A dish for the summer! Un piatto per l’estate!!

Tomatoes stuffed with ricotta cheese and eggs
8 tomatoes
6 eggs
120 g ricotta cheese
1 bunch of fresh basil
30 g butter
Salt
Pepper

Wash the tomatoes, dry them and cut the cap. Take off the seeds with a teaspoon, being careful not to break them. Salt the tomatoes and let them drain off, upside down on a wire rack, for 10 minutes, so that they lose some vegetation water .
Heat the oven up to 180 degrees.
Wipe the inside of the tomatoes with some paper towels. Place them upright on a baking tray lined with baking paper and bake them for about 8 minutes. Put the cups on the plate and cook for another 2 minutes.
Beat the eggs in a bowl and stir in ricotta, basil, coarsely chopped, salt and pepper. Melt the butter in a frying pan. Combine the eggs and ricotta cheese, stirring constantly with a wooden fork, let it thicken for a few minutes.
With a spoon, fill each tomato. Cover them with the cups and serve immediately.

Pomodori ripieni con uova e ricotta
8 pomodori
6 uova
120 gr ricotta
1 mazzetto di basilico fresco
30 gr burro
Sale
Pepe

Lavate i pomodori, asciugateli e tagliate la calotta. Con un cucchiaino svuotateli dei semi facendo attenzione a non romperli. Salateli e fateli sgocciolare, capovolti su una gratella, per 10 minuti, in modo che perdano parte dell’acqua di vegetazione.
Scaldare il forno a 180 gradi.
Asciugare l’interno dei pomodori tamponando con carta assorbente da cucina. Sistemateli in piedi su una placca del forno foderata con carta da forno e fateli cuocere per circa 8 minuti. Mettete sulla placca anche le calotte e fate cuocere per altri 2 minuti.
In una ciotola battete le uova e incorporate la ricotta, il basilico spezzettato grossolanamente, sale e pepe.
Fate sciogliere il burro in una padella. Unite il composto di uova e ricotta e mescolando in continuazione con una forchetta di legno, fatelo addensare per qualche minuto.
Con un cucchiaio riempite ogni pomodoro. Copriteli con le calotte e servite subito.
